It’s been well-documented that breakfast is the most important meal of the day and equally well known that it is the one meal that many of us miss.

For many of us, our mornings are generally spent dashing around, so finding time to sit and eat any breakfast, let alone a healthy breakfast, escapes us.

Wouldn’t it be great then, if we had a breakfast alternative that fitted the healthy bill and that was also quick and easy to prepare? One that you could also take with you ‘on the go’ would be too much ask though surely.

Enter the breakfast smoothie – but not any old smoothie. This year, we will be seeing an increasing use of coconut water in our smoothies. Weren’t expecting that were you?

Coconut water is full of natural electrolytes that hydrate as well as energise, so what better way to start the day than with a coconut water smoothie and adds a tropical taste as we head into summer. Whilst oats are packed with vitamins, minerals, and antioxidant plant compounds, they are also full of fibre and incredibly filling.

Try this *Blueberry Oat Coconut smoothie for a healthier, filling breakfast that should keep you away from the biscuit tin for longer. And, if you are convalescing, feeling a bit run down, in need of an energy boost, or just need something delicious to drink, then this coconut water smoothie is just the thing you need.

*Blueberries aren’t your favourite or aren’t in season (the taste difference is huge!)? Then substitute with strawberries or raspberries instead. Again with these berries, if these are not in season, the frozen ones offer better taste and the convenience of not going off.

  • 1 cup of fresh or frozen blueberries (organic would be best)
  • ½ cup of rolled oats
  • 1 cup unsweetened non-dairy milk, almond, soy, etc
  • 100ml coconut water
  • 1 tablespoon pure maple syrup or 2 Medjool dates

  1. Place all ingredients into a blender and blitz until smooth.
  2. Add a few fresh berries to the top as a final flourish.
  3. Pour into your favourite ‘on the go’ vessel and start your day!
